Hole cards refer to the cards that you are dealt that are not community cards (shared). In poker, depending on the variant being played, there is generally community cards which are shared by all players (visible to all) and hole cards which are cards dealt to each player. For example, in Hold’em, 2 hole cards are dealt to a player and a throughout the course of the hand, should a player remain in the hand, would try to use the 2 cards in hand in combination with the 5 community cards that will be dealt during play to make the best 5 card poker hand.
With the hole cards being hidden in most variations, this opens the door to bluffing and players would try to represent that they have made a hand based on the cards that are on the board.
